Kickboxing class last night turned into ZUMBA. Not the workout I was expecting. Turns out out regular instructor had the night off and someone else did the class...it wasn't bad, I just do not feel like I got the same workout. I am a klutz. I am uncoordinated. I am the last person you would pick for any type of dance competition. Think Elaine from Seinfeld. The class was moving to the right and I was going left. Now if we were doing jumping, kicking, shaking our heads like nuts (more of a punk rock style...) I am right there with no problem (no coordination needed).
Another rainy day and I am hitting the treadclimber after dinner tonight. I am actually (GASP!!!) missing my lunchtime walk!! It helps a great deal in keeping my mind off food and I really need it this week. Today was another test of willpower. I started cooking as soon as I got home from work and we didn't get to eat until after 6 PM
Today's Meals:
5:25 PM - Latte (I know late in day - but cold out, needed something warm), (155 calories)
5:40 PM - 6:00 PM - Munched on 2 cups Traders Joes Kettlecorn popcorn, (130 calories)
6:20 PM – BBQ grilled steak with Avocado Salsa (recipe below), ½ corn on the cob (first of the season), 1 teaspoon butter, ½ cup Trader Joes Chimichuri rice, fresh brewed ice tea (548 calories)
8:10 PM – Caramel Apple Crisps, Chobani Vanilla non fat yogurt, (295 calories)
9:30 PM - No Sugar Added Fudgsicle, (40 calories)
Total Calories: 1,168
As you probably have noticed I have been having Chobani everyday…there was a sale 10 for $10.00 (I bought 20, 5 for hubby) so I loaded up – will be having as a snack for another few days – sometimes you have to take advantage when the price is right (I’ll probably be done with yogurt for awhile after this bunch is gone)
Recipe was for Flank Steak and Avocado Salsa, I had enough steak for 2 servings so I split the below recipe (which is for 4 servings)
Avocado Salsa
3 avocados (peeled, pitted & diced)
2 Plum tomatoes, diced
½ cup minced onion
1 clove garlic, pressed
1 bunch fresh cilantro chopped
1 teaspoon ground cumin
2 teaspoons crushed red pepper flakes
3 tablespoons lime juice
3 tablespoons olive oil
Salt & pepper to taste
Place all of above in medium sized bowl and gently mix together. Add salt & pepper to taste. Set Aside.
1 (1-1/2 pound) Flank Steak
Spice Rub for Steak
1 tablespoon kosher salt (I used regular)
2 tablespoons ground cumin
1 teaspoons crushed red pepper flakes
2 teaspoons ground black pepper
1 tablespoon ground coriander
1 tablespoon chili powder
1 teaspoon ground cinnamon
Dry flank steak with paper towels and rub spice mixture thoroughly onto both sides. Cook steak on preheated grill until flank steak starts to firm and is reddish pink and juicy in center, about 4 minutes per each side. If using a thermometer, pressed into center it should read 130 degrees F (54 degrees C). Remove the steak from the grill, cover with foil and let rest 5 minutes before slicing against the grain. Arrange on platter and top with salsa to serve.
Using spices can really make a meal enjoyable without being fattening. This was an easy and OMG ......Absolutly one of the best, freshest tasting recipes I have ever made!! The spice rub (less cumin because I tore my kitchen apart and couldn't find any)...AWESOME!!!
